One Pot Spaghetti Kid Friendly

Right now with the crazy COVID 19 and much of the world on lockdown, this is a great time to get kids involved in cooking. Not only are you teaching them a skill but you are keeping them busy as well. 

You want quick, easy and fun?!

Then this will be your new go to spaghetti dish for a simple, fresh spaghetti you will want to try. Fast homemade from 5-8 ingredients, did I mention budget friendly as well?

Many times I look at one pot dishes on Pinterest and think…how 1970s of them, today for this one pot wonder WHY NOT… “so for me this is perfect on a lazy day with a bottle of wine!”

Let’s get started:

Ms Foodies One Pot Spaghetti with Basil 

12 oz of spaghetti or linguini noodles

8 tomatoes chopped or 2 pints of cherry tomatoes halved

1 small red or yellow onion sliced thin

5 garlic cloves chopped or grated or sliced thin

1 bundle of fresh spinach roughly chopped

Bunch of Fresh Basil 1/2 for cooking rest for garnish

Grated Parmesan or Pecorino for garnish

Salt and Pepper to taste

4 1/2 cups of water

Make it cheesy and add some cheese on top!

Asiago

Mozzarella

Fontina

Mild Cheddar

Get a high side skillet, place pasta in the middle and arrange all the ingredients equally on each side.

Pour over hot water and set to medium low heat, move the pasta around a bit, so it doesn’t stick. I like to cover mine for about 2-3 mins. When it comes to a boil, I move around again and I do not leave the stove.

This only cooks for about 10-12 minutes depending on your pasta quality.

Once the tomatoes are broken down, water absorbed and pasta cooked, transfer to bowls and top with fresh graded parmigiana and more basil ENJOY!
